- I made this Saturday night, and it was great Sunday for lunch!

- 1/2 pkg. pasta spirals (whole wheat, tricolor if possible)
- cooked and drained
- 1 granny smith apple peeled and chopped
- 1/4 cup raisins
- 1/4 cup green onion sliced into small rings
- 2 shredded carrots
- 1 tsp curry powder
- 1 tbs mayonaise (or the vegan equivalent)
- 1 tbs lemon juice
- 1/4 cup shredded firm tofu (optional)
- salt to taste (optional)

- mix curry powder, salt, mayo and lemon juice into a
- dressing. toss all ingredients together (add more apple,
- raisins, carrots and onions if it looks sparse to you).
- serve chilled over mixed greens.

- Can someone suggest something other than Mayonaise to use? I like the
- creamy dressing, but mayo can be very greasy and my husband doesn't like
- it.
